HACCP for On-Line Supervisor

    Overview of Food Safety & Quality Programs
    In this session, you'll review the basics of food safety and quality systems. In particular, you'll explore:
    • What a HACCP system is, what a quality system is, and how they fit together.
    • The importance of the HACCP system in your plant: the "why" of HACCP
    • Your role as the supervisor and the role of plant staff in the successful management of your HACCP system.
    • The potential ramifications if a plant were to lose its CFIA Recognition status.

    Begin with the Beginning: The Six Food Safety Prerequisite Programs
    Before you can have a working HACCP system in your plant, you must have your prerequisite programs firmly and reliably in place. In this session, you'll explore:
    • How the responsibility for the successful management of a HACCP system requires the active participation of everyone - not just the Quality Assurance department
    • Who has what responsibility for each element of the different prerequisite programs you will need to support your HACCP system

    Steps in Successful HACCP Plan Maintenance
    Putting a good system in place isn't enough. Now you have to maintain it, just as you would maintain a piece of valuable equipment, in order to ensure that it continues to function effectively. In this session, you'll explore:
    • How everyone's involvement — not just the Quality Assurance department — is vital to the process
    • How Critical Control Point (CCP) records must be properly maintained by operations staff
    • How the QA leaders and On-Line Supervisors can effectively verify the accuracy of the CCP records being kept by plant staff
