Course Details:
With a heightened awareness of food safety, consumers are paying close attention to food labels especially the expiration dates and shelf-life of foods in the supermarkets. Determining the shelf-life of a food product evolves from a detailed analysis of the microbiological, chemical, physical and sensory attributes of the food product. All these attributes have to be factored in while maintaining the integrity and quality of the product and making it safe for consumption. At the end of this program, you will be able to:

  1. Define shelf-life and the factors influencing it
  2. Describe the shelf-life determination process
  3. Analyze the relationship between sensory attributes and shelf-life
  4. Identify the role of predictive microbiology in the shelf-life determination of products
  5. Analyze case studies and data to determine shelf-life of food products
